Vietnamese squid fritters

Here is a delicious and savoury recipe from my Vietnamese grandmother. These little dill and squid fritters are to die for! They are perfect for snacking, picnics, buffet, etc. But the best and authentic way to enjoy the squid fritters is to serve them with lots of other Vietnamese dishes, and a nice bowl of Asian plain rice.

 

Makes 15 to 20 fritters

  • 14 oz squid
  • 3 tbsp flour
  • 3 tbsp fish sauce
  • a bunch of dill
  • 2 tsp black pepper
  • 1 clove garlic
  • 1 shallot
  • 1 small onion

Clean, rinse and cut the squid.

Peel the garlic, onion and shallot.

Rinse and wipe the dill.

In a blender, mix the squid, garlic, onion and shallot.

Pour in a bowl, then add the flour, black pepper, fish sauce and dill finely chopped.

Heat a pan of vegetable oil, and fry the dough plunging 1 tbsp of dough at a time into the oil.

The squid fritters are ready when they are golden brown.
