Bubble tea: coconut milk, tapioca pearls and jasmin tea

Have you ever heard about bubble tea? It’s the trendy asian drink, that you can now find in most European big cities in bubble tea bars: hot or iced, in so many different flavours (coconut, taro, vanilla, soybean milk, strawberry, banana, litchi, etc.

What is funny and new about that drink, is the little tapioca pearls, soft and chewy, also known as boba.

But when you find bubble tea in the street, it is made with some flavoured powder, with unknown ingredients. And that’s a little bit scary. These flavouring powders give a colour and a flavour pretty unnatural. I’d rather do my own drink at home, choosing carefully all the ingredients to make it myself 🙂

So here is a bubble tea with coconut milk and jasmin tea. I think these flavours really like each other. But of course, feel free to create your own special bubble tea using green, black, red, flavoured tea, soybean milk, caramel, hazelnut milk, etc.

 

Prep: 1 hour

 

Makes tapioca pearls and syrup for around 5 mugs

  • 1 cup tapioca pearls (black or white)
  • 1 cup water
  • 1 cup brown sugar

For one mug

  • 2 tsp jasmin tea
  • 1 tbsp coconut milk
  • 4 tbsp tapioca pearls and syrup

 

In a big saucepan, boil the tapioca pearls for at least an hour, until soft and chewy.

In a small saucepan, bring the water and brown sugar to simmer so that the sugar melts, then let cool.

When the tapioca pearls are cooked, drain them and rinse with cold water. Put them in the brown syrup. You can store them in the syrup for several days in the fridge.

Brew the jasmin tea for 2 to 3 minutes in 1 1/2 cup of boiling water.

In a big mug, pour 4 tbsp of tapioca pearls and syrup and a tbsp of coconut milk.

Pour in the hot tea, stir and enjoy!

If you want an iced bubble tea, brew the tea and let cool (you can store it in the fridge). In a mug, pour the cold tea with ice cubes.
