Gulaman, Filipino summer syrup with vanilla and banana essence

Here is a very easy-to-make and original summer drink recipe. I got it from my mother. In the Philippines, gulaman is a drink served with bright colors jelly cubes or tapioca pearls, like for bubble tea. But the perfect way to drink gulaman is to pour it in a glass full of shaved ice. To make this syrup, you’ll need some banana essence, that you can buy in Asian supermarkets or on the Internet.

You can keep this Filipino syrup for several weeks in the fridge.

 

Prep : 15 min

 

Makes 2 cups of syrup :

  • 1 cup brown sugar
  • 1 1/2 tsp banana essence
  • 1 tsp vanilla extract

 

In a saucepan, pour 2 cups of water and 1 cup of brown sugar.

Bring it to a boil for 10 to 15 minutes, until sugar is completely dissolved and the syrup is half reduced.

Let cool, then add vanilla extract and banana essence, then stir.

Pour 1/2 inch of syrup in a glass, add some ice cubes and fill with water.

Get refreshed!
