Vishnu’s tandoori chicken

I lived for seven months in Luxemburg, in a big shared house with a Lithuanian girl, two Italians, three French guys and an Indian guy, Vishnu. I think that he and I, were the ones who spent most time in our kitchen. We loved chatting about food and tasting each other’s recipes. Except when it was too spicy for me ! 🙂

And this is how, Vishnu told me about his tandoori chicken recipe. The marinade makes the chicken so tender and tasty. Here is a new way of cooking chicken that will make a change to your usual fried chicken meals !

Prep : 10 minutes (leave to marinate overnight)

Coooking : 10-15 minutes

Makes around thirty bites or 4 drumsticks :

  • 1 lime
  • 1 tbsp garam masala spice mix
  • 1 tsp cumin powder
  • 1 cup plain yoghurt
  • 5 chicken breasts or 4 drumsticks
  • salt and pepper

 

Cut chicken breasts in big chunks.

If you’re cooking drumsticks, score the meat with a knife to help the spices flavour the meat.

Salt and pepper the meat.

In a bowl, mix the lime juice, spices and yoghurt. Add the chicken and mix.

Leave to marinate overnight.

Preheat the oven to 400°F.

On a baking tray covered with baking paper, place the chicken.

Cook 10 to 15 minutes for chicken breast chunks or 20 to 25 minutes for drumsticks.

Serve immediately.
