Another Gordon Ramsay’s recipe! I know, I’m a big fan 🙂
But here is my version of the recipe with dark chocolate, because I like healthy food but I like it yummy! So I added my favourite nuts to the honey coated oat flakes and puffed rice staple. This is the amazing thing about granola: it is so versatile. You can add all the nuts you like, seeds, dried or fresh fruits, chocolate…
You can have your granola with milk, yoghurt, cottage cheese, fruit purée…for a healthy and yummy breakfast or snack, a full pack of energy and pleasure to have a great day!
Makes about 15 portions
- 1 cup honey
- 2 cups oat flakes
- 2 cups puffed rice
- 1 cup Brazil nuts
- 1/2 cup cashew nuts
- 1/2 cup hazelnuts
- 1/2 cup almonds
- 1/4 cup pumpkin seeds
- 1 vanilla pod
- 1 cup chocolate chips or buttons
- 1 pinch of salt
Warm gently the honey in a saucepan over low heat, and stir to dissolve the crystals of sugar.
In a big bowl, mix the oat and puffed rice.
Add all the nuts, seeds and salt.
Cut the vanilla pod in half, remove the seeds with the tip of a knife, and add them to the granola.
Pour in the warm honey and toss to coat the ingredients with honey.
Spread out the granola on a baking tray covered with parchment paper, and bake for 40 minutes at 300°F. Toss it every 10 minutes so that it cooks evenly.
Let cool down. Then add chocolate buttons or/and dried fruits (cranberries, goji berries, raisins, etc).
