Makes about 6 individual cakes
- 3/4 cup butter sliced at room temperature
- 1/2 cup sugar
- 1 cup almond flour
- 7 oz dark chocolate
- 4 eggs
Melt the chocolate in a saucepan over very low heat, stirring regularly not to burn the chocolate.
While the chocolate melts, separate egg yolks and egg whites.
Mix butter and sugar until creamy.
Add the almond flour, melted chocolate and mix. Then add the egg yolks one by one.
Preheat the oven to 400 °F.
Beat the egg whites to medium peaks, and fold gently into the chocolate mixture.
Butter and flour small circle cookie cutters and put them on a sheet pan covered with baking paper or silicon baking mat.
Pour in the mixture and bake for 10 minutes.
Let cool a few minutes, unmold and serve.
