This is the first dish I cooked by myself! I was around 16 and we went camping with some friends. Their cousin, who was older, taught us how to cook this spicy rice. It’s a very hearty dish, made of simple ingredients, and very easy to make: a really good recipe! The magic comes from the spices used to cook the rice.
In the original recipe, there is no sweetcorn, but I think it makes the dish more colorful and crunchy. Enjoy!
Prep : 15 minutes
Cooking : 20 to 30 minutes
Makes 2 main courses :
- 7 oz sausage meat
- 1/2 onion
- 1/2 cup round grain rice
- 1 tsp turmeric powder
- 1 tbsp colombo powder
- 1 cup canned sweetcorn
- 1 cup canned diced tomatoes
In a pan, sauté the minced half-onion and sausage meat with a drizzle of oil.
When nicely brown-colored, add the rice and sauté for few seconds.
Add the spices, sweetcorn and tomato, then add 2 cups of water or chicken stock (better!) and stir.
Leave to simmer 20 to 30 minutes, half-covered. Make sure the rice doesn’t burn. Add some water if needed, until the rice is perfectly cooked and creamy.
