Pompadour potatoes, recipe from Le Dôme restaurant in Paris

Do you know that classy Parisian « brasserie », boulevard du Montparnasse, named « Le Dôme » ? I tasted some great Saint-Pierre fish in this restaurant, that came with these famous Pompadour potatoes. This side dish was absolutely perfect with the delicate and smooth fish. The little potatoes were so soft and buttery ! Given my obvious amazement for these divine potatoes, the waiter gave me the trick…they are simply baked in deep salted butter !

So here’s a new side dish idea perfect to serve with meat or fish !

Prep: 10 minutes

Baking: 30 to 40 minutes

Makes 2 to 3 side dishes:

  • 18 oz small potatoes
  • 18 oz salted butter

And that’s all !

Preheat the oven to 390°F.

Peel the potatoes and place them in an oven dish with lid.

Cut the butter in chunks and melt iit n a saucepan or microwave.

Pour the melted butter on the potatoes and make sure they are completely covered. Bake for 30 to 40 minutes lid on.

When the potatoes are soft, drain them and serve with meat or fish.
